Multigrain Potato Cheese Poppers

Multigrain Potato Cheese Poppers

Multigrain potato cheese poppers

Don't we all just love Comfort food ?
Well, i don't know about you but the only thing apart from a good film that can cheer me up is food. Greasy, oily, cheesy and full of carbs <3
It's haven for me . And even if i'm on a diet I try to eat everything because I don't want my body to forget some food and later become allergic to the same.

Who wants to pop up these gorgeous crispy multigrain potato cheese poppers .
I have been craving for that comfort food for so long and finally I did it. Made these smaller versions to control the quantity on my plate and succeeded like a boss.

One can easily pop up 4-5 of the big ones but I wanted to reduce that so I made halves that way I could control the quantity also.

Here goes the recipe for the same.

Preparation time : 10 minutes
Cooking time : 10 minutes
Serves - 2-3

Ingredients :

3 slices of multigrain Bread
1 boiled mashed / grated potato
1 small white onion
2-3 garlic cloves
1 cup of milk
1 cup water
1 tsp salt
1 tsp red chilly powder
1 tsp dry mango powder
1 tsp cumin seeds
1 cheese cube
4 cups of oil for shallow frying
1 tbsp butter

Method :

Put a pan on medium flame and add butter to it.
Add cumin seeds to it and stir it till it starts to crinkle.
Add chopped garlic and onion to it and stir it till its light brown.
Now temper it with salt, chilly powder, dry mango powder and stir it well.
Add mashed potatoes to it and stir it till the batter is mixed properly.
Switch off the flame and pour the mix in a bowl.
Now add grated cheese to it.Mix it and keep it aside.
In a  big bowl add milk and water.
Now cut the bread slices into half.
Dip one part in the milk-water solution and immediately take it out.
Press the liquid out of the slice till flat and add 1/2 tbsp potato mix to it. Fold it properly and make it into an oval ball.
repeat the same thing with all the other 5 parts.
heat the oil in a shallow pan and fry these poppers.
Make sure that the potato mix is completely covered by the bread.
Fry till golden brown and serve them hot with mint coriander dip and Tomato ketchup.

This used to be my favourite food as a child. It brings back a memory flood. Hope you' all love these babies too <3

Feel free to comment any query and i will get back to you soon-est. Untill then,

keep loving, keep cooking:)

Apple cinnamon semolina cake

                            Apple cinnamon semolina cake

Apple cinnamon semolina cake

I am an emotional baker and eater . I bake whenever I am bored or have too much on my mind . It helps me relax a bit and get lost in that after aroma in the kitchen.

Who wants a piece of this smokey grainy spongy soft apple cinnamon semolina cake ??

Mind the crust if its too dark for you because I like my top crust absolutely crispy . Don't like the soft bit on top so I make mine a bit extra but you can go ahead and bake it for 5 minutes less to have that golden crust on top.

I didn't expect this to be this good . But this experiment with rava for sure tops my list now .
You can also use it as an upside down cake because I have put a nice layer of cinnamon sugar and apple slices below .

You can also try it without egg. but make sure to add some banana to it so that it adds as a replacement to the eggs.

Preparation time :15 minutes
Cooking time : 35 minutes
Serves : 10 slices

Ingredients :

1 cup all purpose flour ( Maida)
1/2 cup Semolina ( Dry roasted in a pan till light cream )
1 tsp baking powder
1/2 tsp Baking soda
1 tbsp Cinnamon powder
1/2 cup clarified Butter or Ghee
1/2 cup Milk at room temperature
100 g derma sugar or powder sugar
2 eggs at room temperature
1 tbsp vanilla essence
1/3 cup chopped walnuts
1/2 cup cinnamon sugar ( 2 tbsp cinnamon powder & 2 tbsp powdered sugar )
1 apple sliced into circles

Method :

In a bowl sieve together all dry ingredients like flour, semolina, baking powder, baking soda and cinnamon powder. Mix it together so its even.
In another Bowl add ghee, sugar. Whisk it well till sugar is slightly dissolved.
Then add eggs, vanilla and milk to the mix and whisk it slightly till all the mix is together.
Now fold the wet mixture into dry mixture smoothly. Do not over mix.
Line the loaf tray with butter paper or spray some butter and flour.
Add cinnamon sugar evenly and place the apple slice on it.
Now pour the mixture into the baking loaf tray and throw in the chopped walnuts.
Even out the surface so the walnuts are slightly dipped into the batter.
Bake this mixture at microwave convection mode for 35 minutes at 200'C.
please check the cake in between.
Once done, prick it using a knife . If its clean that means your cake is done.
Cool the cake on wire rack. Do not cut the slices right away, otherwise it won't hold.
Once completely cool, slice the loaf and enjoy it with a scoop of vanilla ice cream and some blueberries and cranberries sprinkled on top.
Its as good as an apple pie <3

P.S- Have not tried it without eggs . But if you do then please let me know how was it.

Keep cooking, Keep loving :)

I had some left over mint coriander chutney and so I thought to marinate paneer in it but then that would require lot of preparation and marination and since I was running short on time so I just whipped up this chutney in the pan along with veggies and paneer and it was amazing !!!

                                 No cream Pumpkin soup

No cream Pumpkin soup

Soups and salads are a must if you want to have a body which is healthy and can withstand in any circumstances.

I have been meaning to find soup options to the veggies that I hate. The thought of having pumpkin is not at all appealing to me hence I tried to convert it into soupy slurps so that one can enjoy the taste without hating the vegetable.

I am trying to swap my dinner of chapati, dal etc with soups and colourful salads to give my body more of vitamins and minerals and less of carbs.

This is a good #keto recipe.

Here goes the recipe of this no cream Pumpkin Soup :

1 tsp Fresh Rosemary
1 tsp fresh parsley
2 cups of water

Take a Boiling pan and bring to boil 2 cups of water. Once boiled , add the baked vegetables along with black pepper, fresh parsley and fresh rosemary. If fresh is not available then use dried ones. You can also add fresh corriander and mint if those are unavailable.

Bring it to boil and switch off the flame.
Blend the mixture using a hand blender and bring it to boil again .

Add salt and lemon juice. Drop in a  tbsp of Butter if you like and serve hot with a toast or sip it just like that.

P.S - If you don't have a microwave or oven then don't worry.
Boil pumpkin pieces till 1 whistle.
In a pan, add butter, chopped garlic, chopped onion and stop it till golden brown.
Then add the pumpkin to it and fry till slight golden.
Add water, herbs and bring it to boil. Later using hand blender churn it and boil once before serving.

Cream is a good fat so there is no harm in taking that once a while.
