Beso Rolls

Everyday is a what to cook Battle for me. And I think its the same for all of us. So much so that now even my sister calls up to ask me what will I be coking tonight so she can get ideas.
While thinking of all the vegetables I have I thought to create something new without using All purpose flour or Maida. 
Best rolls, Thats what I would like to call them.Beso means kiss and when my man ate them, he planted a kiss on my hands saying that he will get them insured.. hahaha
Its super easy and tastes delicious.You just can't stop at one and they are very healthy too. I made these without cheese but if you are a cheese lover then go ahead and sprinkle some on the filling inside for that gorgeous out of the world taste. Add whatever you like and make your own best rolls.

Preparation Time :  15 minutes
Cooking Time :  20 minutes
Serves : 4 rolls

Ingredients :

1/2 cup sooji / semolina
1/2 cup Besan / gram flour
1/4 cup water
2 room temperature eggs
1 tsp salt
1 tsp red chilli powder
1 cup chopped mushrooms
1 cup chopped onion
1 cup sweet corn
1 cup chopped peppers 
Mustard sauce
Chilli sauce or Nando's sauce
ketchup
Chaat masala
chopped Coriander leaves or spring onion for garnishing
2 tbsp butter
1/4 cup olive oil

Method

Take a Big bowl and add semolina, gram flour, salt, chilli powder, eggs, water and which it nicely till it forms a smooth batter. Don't make the batter too Runny.
Place a pan on medium flame and add butter to it. Once the butter is melted then add mushrooms , ion, peppers, sweet corn to it an sprinkle salt and black pepper on it. 
Sauté it till its light golden brown. Put it off the flame.
Now heat the Skillet and brush olive oil on it. 
Pour mixture and spread it evenly using the spoon. Let it cook.
Flip it and let it cook till It's partly light brown.Make all the Base and keep it aside.
Take a base and add nanny's sauce on it. 
Place the vegetable mix and drizzle some mustard sauce and ketchup. 
Sprinkle some coriander leaves and chaat masala. Add cheese if you like and roll it. 
On the medium flame, roast these a bit till slightly crisp from one side and serve hot with ketchup or green mint chutney.

You can add whatever vegetables or meat you like. But the batter should not have All purpose flour else the healthy bit goes for a toss. Until then,

Tried making this amazing Keto friendly recipe using Zucchini, Bell peppers, Onion, Tomato, Cheese, olive oil and It turned out to be super yum and just what I wanted to have for lunch.
I have been trying to research more about Keto recipes. kept is a very popular weight loss diet. Its a very healthy Lifestyle change that can eliminate almost al of the medicinal problems over the period of time.
Also known as Low carb high fat protein diet, Its a boon for non vegetarians because they can eat Bacon, Fish, chicken, lamb but for vegetarians well, the options are limited and I keep wondering What will I eat if I were to start this diet.
So I thought to myself why not create something for myself and keep it together so that when i start my diet then i will have all this ready.

Preparation Time : 30 Minutes
Cooking Time : 30 Minutes
Serves : 2

Ingredients :

1 Zucchini, sliced like chips
1/2 cup finely chopped yellow and red peppers
1/2 cup finely chopped green capsicum
1 onion finely chopped
1 Tomato diced into small pieces
Parmesan Cheese or Amul cheese cubes
1/2 cup olive oil
1 tsp salt
1 tsp black pepper
1 tsp paprika powder
2 tbsp dried oregano or Italian seasonings
4-5 garlic clove finely chopped

Method :

Slice the Zucchini using a slicer or a knife into thin ovals like chips.
Place these in a Bowl and add olive oil, salt, pepper, paprika, garlic, dried oregano or Basil into it and mix it nicely.
Spray cooking spray on an aluminium tray and place the chips one by one in a way that they are not over lapping too much on each other. Keep all the chips in the tray.
Now cook it in the microwave on pre heat / convection mode at 200'c for about 30 minutes.
Add chopped veggies and grate the cheese on top. Sprinkle Italian seasonings or basil on top and cook it for another 20 minutes at the same setting.
Serve it hot with a slice of garlic bread if not on Keto diet else enjoy it just like that.

Choco Almond peanut Butter Ice-cream

We are an ice cream couple. People buy cake and pastries to celebrate birthdays and happy moments. Well, we buy ice creams and its never a scoop or two instead a tub or two :)
And then you know what happens, Obesity. 
So I have been trying to find healthy alternative to Ice cream and ended up with this delicious ice cream.
It's a Fruit Blast. It's not creamy but has the texture of a creamy ice cream which means that there is no cream and sugar and intact is loaded with goodness of fruits and nuts. 
So go ahead and treat yourself to a bowl of this yum bum healthy scoop of choco along peanut butter ice cream.

Preparation Time : 4 hours
Cooking Time : 10 minutes
Serving : 8 -10 scoops

Ingredients :

4 banana
1 tbsp of cocoa powder
2 tbsp of Peanut Butter
1/4 cup cold Milk
1/2 cup almonds

Method :

Peel off the banana's and chop them into medium pieces. Take a Zip lock and add all the chopped banana's into it and Freeze it for upto 2 hours.
In a food processor Jar Add frozen banana, Cocoa powder, Peanut butter, Milk and almonds and churn it for 5 minutes or till the batter is thick and smooth.
Pour the mix in an aluminium tray and Freeze it for 3-4 hours or over night.
Serve it chill and garnish it with chopped almonds , Honey , Maple syrup or whatever you like. 
You can also eat this as a topping with warm Brownie or make yummy banana shake with the mix. Just add 1 glass of milk to a scoop of ice cream and it will be an instant summer cooler fix. Until then,
