Banana Cinnamon Pancakes with Honey & Chocolate chips
I Love Everything about Holidays. They just make you want to gorge on all the utterly Butterly delicious food. 
Since its Start of the weekend, so what better way to start your day with a wholesome relish breakfast - Pancakes :)
Ingredients:
1 cup of All purpose flour (Maida)
2 tsp of Baking powder
1 tsp salt
¼ tsp baking soda
1 cup Milk
3 tbsp melted Butter (Room temperature)
1 egg
2 tbsp white sugar
2 tbsp cinnamon powder
4 tbsp honey
2 finely chopped bananas
1 tbsp powdered Sugar
Choco chips
Method:
In a bowl whisk butter and sugar till nice and smooth. Add the egg and  milk to it. Whisk.
Sift flour, baking powder, baking soda, Cinnamon powder , salt and keep it aside.
Now make a well in the centre and add wet mixture to it slowly. Mix until smooth.
Heat the Skillet on low/medium flame and brush some oil on it. Pour the batter  in a single go and don’t mix it. Just drop it on the pan.
once it starts to dry up , check from the side and turn it upside down. It should look golden brown from the done up side.
Serving:
Place one pancake and drizzle some honey onto it. 
Add finely chopped banana to it and sprinkle some cinnamon powder. 
Add another layer of pancake and drizzle some honey onto it. 
Sift some powdered sugar on top and add chocolate chips or more banana, whatever you like !

You can replace banana with apple,plum, pear, strawberry,cherry, blueberry etc.

Tried this Gujarati snack for breakfast yesterday and it turned out to be super yum and of course healthy AF because it’s neither fried nor baked. It’s cooked using steam hence almost negligible oil is used while cooking this delicacy. 
Paanki, as the name suggests is cooked in between giant banana leaf. Wondering how is that possible??
Well, Let me show you an easy and quick way to make this mouth watering steamed paanki for those Kitty Parties, weekend snacks and anytime hunger pangs !!
Preparation Time - 5 min
Cooking Time - 2 mins                        
Serving - About 6-7 Paani
Ingredients:
3 Banana leaf
Coconut oil / ghee/ Rice bran oil /Olive oil to brush on leaf ( You can use any)
5 tbsp Rice flour (Its readily available in the market )
2 tbsp Vigna mungo flour (Urad dal flour) (Blend the dry urad dal in mixer and use that as flour)
2 tbsp curd
2 Chopped green chillies
handful of coriander leaves
1 tsp Asafoetida (Heeng)
1 tsp cumin (Jeera)
1 tsp Ginger garlic paste OR garlic powder
1 tsp salt
Water as required
Method : 
Take a bowl and add rice flour, urad dal flour, cumin, Heeng, salt, coriander leaves, ginger garlic paste, curd and mix it properly. Make sure that no Lumps are formed. Add water to it and make a slightly soft batter which is neither too runny nor too stiff. Keep the mix aside for 10 minutes.
Take a Banana leaf , fold it in half vertically and chop off the centre stem. Now you will have one side of leaf on top of the other leaf. Cut it into 3 equal parts or according to the size of your skillet.
Take the darker part of leaf and brush a bit of oil on both the leaves. Make sure you don’t brush oil on both the sides of a leaf. Now add 2-3 spoons of the mix and spread it evenly. Now place the other oiled leaf on top of it and press it gently.
Heat skillet on medium flame and place the leaf on top. You will hear a crackling sound. The leaf will start to shrink .Flip it and cook it. The leaf will shrink and turn golden brown. Try to remove one side for checking . The Paanki should easily come off the leaf. 
Your Paanki is ready to eat. Serve it hot with Green chutney and curd. Though I love eating it without anything on side :)

Hello Folks, Welcome to the world of Food experiments.I love how you all appreciate my efforts and that is what motivates me to write more. 
My Relationship with Simple food is that of An old Crush. I Desire him but seeing him everyday will eventually kill all the butterflies in my stomach. Same is with simple food. I can eat it but after 2 days ,I would definitely cheat and gorge on something heavenly. Now we don’t want that ? Do we? So i keep experimenting with my food because no matter how simple and healthy it is if it does not taste good and look good AF, I won’t have it and I will end up gorging on Buttery cheesy take outs. 
Lets move on quickly to the recipe part so you can cook and enjoy this Delish meal.
Preparation Time: 10 minutes
Cooking Time: 5 minutes
Serving - 2
Ingredients:
Broccoli flowers, Button Mushroom, Green Zucchini, Yellow Squash, Red yellow Green bell peppers, Cucumber, Beetroot, carrots, Cherry tomatoes, Green Olives, Lettuce.1 tbsp Olive oil / Butter
1 lemon juice
1 tsp Black pepper
1 tsp Sea Salt
1 tsp Roasted sesame seeds
1 tsp finely chopped garlic (Optional)
Finely chopped parsley
Method:
Heat a Pan on low flame and add Olive oil and chopped garlic to it. If you put garlic in cold oil then it absorbs the pungent flavour of it completely and gives the entire sautéed vegetable a beautiful flavour. Once it starts crackling, add all the vegetables except lettuce, olives & Cucumber and cover it with a  Lid. On another stove take a small fry pan and add sesame seeds to it on low flame. Keep stirring it till it turns slightly golden brown then keep it aside. Keep stirring the vegetables and you will notice a slightly brown texture on them. Switch off the flame and keep the lid on. 
Now for salad dressing, In a small bowl add lemon juice, pepper, sea salt, finely chopped parsley and mix it well. Serve your salad in a serving bowl and add the dressing to the sautéed salad. Mix well and then sprinkle the roasted sesame on top. Serve it hot. 
Sautéed hot salad is good for body and is extremely healthy. So don’t hesitate to experiment and add / subtract the vegetables. Keep enjoying and experimenting with your food because life is not meant for boring food. Life is meant to live it & Love it.

 Sautéed vegetable Rice with Sunflower seeds & Basil

Left Over Rice ? Don't know what to do ? Well, there are million ways to recycle the left over rice into yum balls. 
My all time favourite is this sautéed vegetable rice with some Soup to go along with. You could also make Rice pancakes, Lemon rice, Khichri, Rice cheese roll, Potato Sticks and whatever you can think of. 
Rice is also super healthy and easy to digest that is why whenever you have rice, you end up gorging on more food after 2-3 hours because you feel hungry. 
Lets get to cooking this delicious bowl of yumminess and colour.

Preparation Time - 10 minutes
Cooking Time - 10 minutes
Serves - 2 

Ingredients :

1 big bowl of cooked left over rice
few florets of brocolli
3-4 mushrooms
1 small bowl of chopped peppers
1 small bowl of chopped capsicum 
1 small onion
1 tbsp ginger garlic paste
1 tsp sunflower seeds
few leaf's of basil
1 small cup of chopped corriander 
1 tsp turmeric
1 tsp red chilli powder
1 tbsp salt
2 tbsp lemon juice
2 tbsp olive oil / Sunflower oil
1 tbsp chopped Garlic

Method : 

Heat the Kadhai / deep pan on medium flame. 
Add sunflower oil and add chopped garlic, sunflower seeds, Ginger garlic paste, onion and sauté it till golden brown. 
Add all the other vegetables and cover the lid for 2 minutes. 
Add salt, red chilli powder, turmeric to the vegetables and add cooked rice to it. 
Add lemon juice and basil to it and cook it for a minute.
Garnish it with chopped corriander and serve hot with a bowl of pepper curd or a bowl of curry / soup :)
