Stir fry Arbi

When I was growing up, I would always ask my grand mom if I could help her in chopping vegetables to which she always replied a stern NO.

And once to forever ward me off so I don't bother her again, she said if you touch this vegetable then your hands will start itching and the itch won't stop . 

I got scared and since then neither ate arbi nor ever cooked until recently When B got this home on his way back from office . 
I was surprised but happy too because I got something new to try on.

Arbi , also known as Taro Root Promotes healthy digestion, regulates hypertension, lowers blood pressure, improves heart health, and prevents cardiovascular disorders. Plus this dish is a perfect fasting food.

Preparation Time :15 minutes
Cooking Time : 35 minutes
Serves: 2-3

Ingredients :


250 grams Arbi
2 tbsp ghee / Mustard oil
1 tsp Ajwain (carom)
1 tsp Heeng (asafoetida )
2 tbsp coriander powder
1 tsp turmeric
1 tsp red chilly powder / paprika 
1 tsp salt 
1 tbsp dry mango powder
1/2 cup chopped fresh coriander
1 tbsp lemon Juice

Method :

1) Boil 250 gms of arbi in a pressure cooker for 1 whistle .
2) let it cool and peel off the brown layer and chop it off in small circles. 
3) On medium flame, take a pan and add mustard oil in it. Let it heat up properly and then add the arbi to it. 
4) Let it become brown and then add a lil more oil on the side and add ajwain (carom), heeng (asafoetida ), 2 tbsp coriander powder, 1 tsp turmeric, 1 tsp red chilly powder / paprika , 1 tsp salt, 1 tbsp dry mango powder. 
5) Sauté it for about 10 minutes then switch off the flame and add 1 tbsp lemon juice . 
6) Garnish with fresh coriander leaves and serve with a stuffed paratha or bread .
