Choco Almond peanut Butter Ice-cream

We are an ice cream couple. People buy cake and pastries to celebrate birthdays and happy moments. Well, we buy ice creams and its never a scoop or two instead a tub or two :)
And then you know what happens, Obesity. 
So I have been trying to find healthy alternative to Ice cream and ended up with this delicious ice cream.
It's a Fruit Blast. It's not creamy but has the texture of a creamy ice cream which means that there is no cream and sugar and intact is loaded with goodness of fruits and nuts. 
So go ahead and treat yourself to a bowl of this yum bum healthy scoop of choco along peanut butter ice cream.

Preparation Time : 4 hours
Cooking Time : 10 minutes
Serving : 8 -10 scoops

Ingredients :

4 banana
1 tbsp of cocoa powder
2 tbsp of Peanut Butter
1/4 cup cold Milk
1/2 cup almonds

Method :

Peel off the banana's and chop them into medium pieces. Take a Zip lock and add all the chopped banana's into it and Freeze it for upto 2 hours.
In a food processor Jar Add frozen banana, Cocoa powder, Peanut butter, Milk and almonds and churn it for 5 minutes or till the batter is thick and smooth.
Pour the mix in an aluminium tray and Freeze it for 3-4 hours or over night.
Serve it chill and garnish it with chopped almonds , Honey , Maple syrup or whatever you like. 
You can also eat this as a topping with warm Brownie or make yummy banana shake with the mix. Just add 1 glass of milk to a scoop of ice cream and it will be an instant summer cooler fix. Until then,

Keeping my Mid meal Snack healthy is a battle I Fight everyday and well today it became an easy peasy one with this gorgeous Roasted Almonds and Fox nuts sautéed in Ghee or clarified Butter.
Fox nuts also known as Makhana is used in many Indian recipes and is a hot favourite during Navratri's or fasts. Hence I thought to make my own fasting snack which is packed with wholesome health and happiness.
Fox nuts are high in Fibre and low in calories and is an excellent source of Iron, calcium, protein, zinc, magnesium. I always keep a small box full of these so I can eat them when hungry rather than eating those packet chips and then crying over excessive weight.It only takes 5 minutes to make these. So lets get started.

Preparation Time : 2 minutes
Cooking Time : 5 minutes
Serves : 2

Ingredients :

1 cup fox nuts
1/2 cup Almonds
1 tsp Black pepper
1/2 tsp sesame seeds
1 tsp Rock salt ( also known as sendha namak) 
1 tbsp Ghee or clarified butter

Method :

Heat a sauce pan on medium flame and add ghee to it.
Now add fox nuts and almonds to it and stir it for 2 minutes.
Add black pepper and rock salt to it.
Once the almonds start turning dark brown and fox nuts turn crispy, add sesame seeds.
Toss the entire mix and turn off the flame.
Let it cool on a wire rack.
Once cool then store them in an air tight container for future.

P.S - You can also add walnuts or cashews to this mix and incase you have a sweet tooth then add few raisins too.
