Semolina brittle Zoodles with caramelised onions and cashews


My Grandmother is very fond of Vermicelli and she makes these with nothing but potato, tomato and peas fried in Asafoetida and carom seeds. But over the years I have grown out of its taste.


Recently, a friend's mom made these and I was like, I have to try these with my own twists and viola! I made these with a good dose of nuts, veggies and lemon.


This is as healthy a breakfast as Poha or idli also known as upma in some parts of India.

And by the looks of it, you can totally make your kids believe that these are small Zoodles and, Do they not love noodles ?

Here goes the recipe for this one:

Preparation Time : 10 minutes
Cooking Time:10 minutes
Serving : 2


Ingredients :


1 cup Semolina Vermicelli
1 onion 
1 small cup of peas 
1/2 tbsp lemon juice 
1 tsp ginger garlic paste
1 tsp salt 
1 tsp mustard seeds
Few curry leaves 
1/2 tsp red chilly powder
Few leaves of coriander 
4-5 cashews 
2 tbsp ghee or olive oil 
2 cups water


Method:


Roast a cup vermicelli using a tbsp of Ghee and keep it aside. 

Add ghee, mustard seeds, curry leaves and cashews till light brown. 

Add onion and peas and fry till golden brown. 

Add Vermicelli and lemon juice and 2 cups of water.
Cover the lid and let it cook for 5 minutes. 

Keep stirring till all water is evaporated. 

Garnish with coriander and serve hot.

You can add whatever other vegetable you like but I like it simple ❤️
